Erin is a cake designer and the founder of Birch House Bakery.
She founded her business in 2016 after deciding to ditch the commute to London to stay at home to look after her son Henry.
She comes from a family of keen bakers, and with a background in art and design / fashion has been fortunate to grow a business which combines both her creativity and passion for baking.
Based in Balcombe, a small pretty village in West Sussex her design style is contemporary, elegant and stylish. She loves to use both fresh and dried florals on cakes as well as structural techniques with wafer and rice paper. She is passionate about creating beautiful cakes that make a romantic statement on your wedding day.

Being a luxury cake artist based in the heart of Brighton and Hove, Holly offers bespoke wedding and celebration cakes for all occasions. Created with the finest quality ingredients, using traditional cake decorating techniques, exclusively from a nut-free kitchen.
She specialises in contemporary wedding cakes and confections and has had cakes featured in Want That Wedding, Festival Weddings Magazine, Cake Masters Magazine and provided cakes for many special occasions.
Holly suffers from severe anaphylaxis to nuts and seeds, creating cakes from a nut-free kitchen is at the heart of her work. She is passionate about providing allergy-friendly cakes and desserts that refuse to compromise on flavour or quality and can be enjoyed with peace of mind.
Her designs centre on timeless understated elegance, drawing on inspiration such as art, fashion, textiles and nature. Her aim is to provide a stunning design with luxurious flavours that will delight and indulge every guest and serve as the perfect centrepiece for your special day.
